Or is it?\u00a0\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cI grew up in <\/span><strong>Bourges<\/strong><span style=\"font-weight: 400;\">, in the <\/span><strong>Loire Valley<\/strong><span style=\"font-weight: 400;\">\u2014a very small town of under four hundred people,\u201d says chef <\/span><strong>Andr\u00e9 Gamard<\/strong><span style=\"font-weight: 400;\">. \u201cIn 1957 I went to the hospitality school of hotel management and cooking at <\/span><strong>Saint-Amand<\/strong><span style=\"font-weight: 400;\"> in the <\/span><strong>Department of Cher<\/strong><span style=\"font-weight: 400;\">. We started with twenty in the class, and after three years only about ten people were still in it. Of all the class, only six of us stayed in the profession. After school I went to <\/span><strong>Paris<\/strong><span style=\"font-weight: 400;\">, where I worked like a dog and got paid nothing.\u201d Ah, the salad days. \u201cBut we were trained to be really good at what we were doing.
