Talk about imagination on stilts. In 2012, restaurateurs Wayne Wescott and Robert Wallis snapped up a wind-wracked cottage ay 30 Mouse Island Road in
St. George and let their imaginations run wild. Soon, they fascinated spectators by completely reimagining the landmark into the sophisticated structure we see today. Readers may recognize Wescott and Wallis as the co-owners of Montsweag Restaurant in Woolwich, for which Wescott was named Restaurateur of the Year in 2022 by Hospitality Maine.
